Oven Baked Kentucky Cod Fillets & Quick Hushpuppy recipe

Oven Baked Kentucky Cod Fillets recipe
Preheat your oven to 450 degrees

4 (app 3 ounce) cod fillets
1 egg white, lightly beaten
1/4 cup fine dry bread crumbs
2 Tbls grated Parmesan cheese
1 Tbls cornmeal
1 tsp olive oil
1/2 tsp Italian seasoning
1/8 tsp garlic powder
1/8 tsp ground black pepper
enough cooking spray for treating broiling pan

In a shallow bowl or casserole dish;
stir together the bread crumbs, cheese, cornmeal, oil, italian seasoning, garlic powder and pepper.

Place the cod on the pan, folding under any thin edges of the filets.
Brush with the egg white and spoon the crumb mixture evenly on top.
Bake for 10 to 12 minutes or until the fish flakes easily when tested with a fork.

Quick and easy Hush Puppies


1 box Corn Muffin Mix
1 egg
1/3 cup milk
1/4 cup flour
1/4 cup finely chopped onion or onion flakes
frying oil

Preheat deep fryer oil to about 375
Stir all ingredients until well mixed.
Drop by level teaspoon into hot oil and fry for 1 minute on each side.
Drain on paper plate with a layered paper towel.

Makes over 4 dozen Hush Puppies
