Another Broccoli Soup Recipe

Broccoli Soup Recipe

In a large stock pot:

2 large pkgs frozen broccoli
1 cup + water
2 cups + milk
1 1/2 sticks butter
2 ckn boullion cubes
1 T minced onion
1 T minced garlic
1 T seasoned pepper
1/2 T salt

cover & simmer until the broccoli is cooked down.
Then add:
a dozen or so crushed saltine crackers
or a cup of oyster crackers, crushed
and
several thick slices or several cups of cubed velveeta
stir, stir, stir
re-cover
continue simmering

*add instant mash potato flakes, a tablespoon at a time to thicken if needed

I have several versions of home made broccoli soup that I enjoy making.
This one is a little "zestier" than some of the others because of the seasoned pepper.
