QUICK & EASY KEY LIME PIE OR TART RECIPE
Hello Friends,
We have talked before about frugal cooking.
I now have discovered a glitch in my system.
Have you noticed the package sizes and portions
of your prepared food from the grocery is getting smaller and
smaller. This isn't at any one particular grocery, but at all grocery stores.
I first noticed it when I bought a pound of hickory smoked bacon,
got home and realized it was NOT a 1 pound package.
It was 12 ozs.
I felt sooooo ripped off.
The prices are continuing to go up and yet the
portions continue to get smaller, what is that about ?
Before Christmas, I went to purchase a package of
4 boneless chicken breasts and
now there are only 3 in the package.

mmm, where is the other chicken breast ?
Tonight I opened a box of frozen chicken patties
expecting the usual portion of 6 frozen patties, guess what ?
There are only 5 in the box.
5 ???
All of these changes are messing with my cooking methods.
I am the Leftover Queen.
I use every bit of everything I cook.
All of my leftover veggies, I make into
a home made soup.
If I have a leftover corn muffin or 2 in danger of becoming stale,
I will crumble them into a dressing mix.
Back to my 5 breasts...
(stop smiling, you know what I mean...)
Lets use the chicken patties as a basic example.
I always cook all 6 patties at once,
2 for him, 1 for me for sandwiches.
That leaves 3 for the next meals.
1 for him for another sandwich for lunch.
I'll fix him another sandwich with chips and a pickle.
Then at supper...
I usually either slice the other 2 patties in strips
add to my regular tossed salad , turning it into a Chicken chef salad
or
I dice them up, add a little mayo and ground pepper
and voila, a light chicken salad sandwich.
See what I mean ?
Now I have to rethink all of my frugal cooking strategies

Chicken breast pattie sandwiches
w/ melted colby / jack cheese.
Crinkle cut french fries
tossed salad w/ homemade Italian croutons
Key Lime Tarts
KEY LIME PIE or KEY LIME TART RECIPE

Filling:
3 eggs, separated
1 can condensed milk (not evaporated)
1/2 cup real lime juice
2 to 3 tsp lime rind
a few drops green color
1/2 tsp cream of tartar
1/4 Cup sugar
In medium bowl:
beat egg yolks, add condensed milk,
lime juice, rind and color.
In small bowl stiffly beat one egg white
Add to filling and turn into pie shell or tart shells.
Beat rest of egg whites with cream of tarter till foamy.
Slowly add sugar, beating till stiff.
Spread on top of pie or tarts.
Bake 15 min. or till golden brown.
Can be Made a day or 2 before serving.
