Kentucky Sweet Potato Casserole

Hello friends,
Here is one of our favorite variations on using up sweet potatoes...
I call it Kentucky Sweet Potato Casserole.


Kentucky Sweet Potato Casserole

Preheat oven to 350

2 lbs sweet potatoes, washed and peeled
1/4 Cup brown sugar
1 tsp cinnamon
1 tsp nutmeg
1 Tbls melted butter
1 1/2 Cups mini marshmallows, divided

In a large to medium saucepan, Cook sweet potatoes.
After cooling for a few minutes, mash up your potatoes (should have app ~ 3 cups) , mix in the above spices, the butter, and half the mini marshmallows.
Place your sweet potato mixture in a greased 1 1/2 quart baking dish.
Top with remaining marshmallows.

Bake for approximately 25 minutes or until
marshmallows are lightly browned
