FLOWERING QUINCE PIE & PIE SHELL RECIPE
I wanted to share a picture one of our blooming Quince shrubs.
The Blooms are G O R G E O U S.
We found them hidden among the weeds, brush and briars
beside some cherry trees down by the old 'home' place..
Because they have not been 'kept' well, the fruit is very small and
does not ripen healthy enough for me to use.
I will keep you posted, we are trying our best
to nurse them back to health.
QUINCE
Flowering Quince
'Chaenomeles x superba Pink Lady'
Their thorny stems make them a good plant to use as a barrier plant.
The apple - like fruit is very small and can be used to make jellies or pies.
I found an old Quince pie recipe I wanted to share with you.
QUINCE PIE RECIPE
2 cups quince purée*
1 large egg
1/2 c. milk
1/2 c. cream
1/2 c. sugar
1/8 tsp salt
2 Tbsp. cornstarch
3/4 tsp. cinnamon
1/4 tsp. allspice
1/2 tsp. nutmet
*To make quince purée:
Wash off fruit, then cube.
Place in a saucepan and steam in a little
water until soft.
Force through course, then a fine sieve.
Mix quince purée, egg, milk and cream.
In another bowl: mix sugar, salt, cornstarch and spices.
then add to first mixture.
Pour into unbaked pie shell
Bake for 50 to 60 minutes
in a 325 degree oven.
Serve with whipped cream.
OLD FASHIONED PIE SHELL
(very old recipe)
1 lb lard (not shortening)
1 Tbsp salt
1 cup boiling water
4 1/2 to 5 cups flour
Place the Lard into a bowl.
Set aside to get to room temperature
Add salt & mix well.
Pour the cup of boiling water over mixture.
Beat with an electric mixer till creamy.
Then add the flour, a little at a time
You can tell by the consistency
(usually 4 1/2 C is enough)
Mix into a smooth ball.
Place in refrigerator to cool.
After cooling roll out
and shape for pie shell.
