Kentucky Stuffed Green Peppers Recipe

3 large green peppers

FILLING MIXTURE
1 pound ground beef
1 1/2 cups rice, cooked
2 Tbls finely chopped celery (optional)
2 Tbls finely chopped onion
1/4 cup your favorite chili sauce
2 tsp salt
1/4 tsp pepper
1 egg
*2 - 4 Tbls. shredded cheese for topping
you can use:
mild cheddar
sharp cheddar
fiesta blend
or any one of your fav shredded cheeses

Halve green peppers lengthwise
Remove the stems, seeds and all membranes
In a large pot, add 2 teaspoons salt to just enough boiling water to cover peppers.
Boil peppers uncovered for 5 minutes
Drain

Combine filling mixture ingredients {except cheese} and mix well.
Fill pepper halves with filling mixture and place in 1/2 inch of hot water in a 13x9 baking pan.

Bake uncovered at 350 degrees 45 to 55 minutes.
*Sprinkle cheese over peppers and bake 5 minutes longer to melt cheese.
