Roasted Garlic Jam Recipe

Roasted Garlic Jam Recipe

4 large heads garlic, peeled & roasted
2 tsps Olive oil
1 Tbls fresh lemon juice
1/2 tsp kosher salt
1 Tbls Italian parsley, coarsely chopped
or use 1 Tbls of freshly ground Italian seasonings
1/8 tsp ground cayenne pepper (optional)
1/8 tsp fresh ground pepper

Place peeled, roasted garlic in a bowl
Mix with a knife until it forms a paste.
Add remaining ingredients.
Mix well.

makes app ~ 2/3 of a cup.
Store in refrigerator, tightly covered.
I would recommend using a small jelly jar with a tight fitting lid.
Check your seasoning, baking section at your local store.
There are now selected seasonings available in a new type of jar. This jar comes with a "grinder' attached to the top. This makes freshly ground salts, peppers and seasoning mixes more affordable to those of us on tight budgets.

Uses for Garlic Jam:
-garlic bread and bread sticks:
Spread on fresh bread slices, toast in the oven until brown.
Fresh garlic bread is a 'Must Have' with your favorite Italian dish.
-garlic breadsticks
-bruschetta
-Spread some on your pizza dough before baking.
-Hot Meatball subs:
spread 1 or 2 tsps on a sub bun and toast in the oven for a few minutes,
before adding your meatballs, sauce and cheeses.
-rub on grilled meats.
