Mom's Southern Potato Salad Recipe

Mom's Southern Potato Salad Recipe

3 lbs potatoes
1 cup sweet pickles, diced
1 to 2 tsp of juice from pickle jar
1 1/2 cups + mayonnaise
1 Tblespoon milk
1 tsp salt
1 tsp pepper
4 large eggs, boiled, peeled and chopped
sprinkle of paprika for garnish

Boil potatoes until they are tender, do not over cook
Drain potatoes immediately and let them cool completely.
Peel and cube potatoes
Add all other ingredients, except paprika
Mix by hand lightly until thoroughly mixed.
Cover and Refrigerate.
Right before serving sprinkle the top with paprika (for color)

Mom's Mustard Potato Salad Recipe

using the same recipe as above add
2 Tablespoons prepared mustard.
