Creamy Kentucky Squares Dessert Recipe

CREAMY KENTUCKY SQUARES RECIPE

Preheat oven to 350
Grease 13x9 inch pan

basic bar layer:
1 box yellow cake mix
2 eggs
1/2 C butter flavored crisco, melted
1 Tbl milk
1/2 C chopped pecans or black walnuts

topping:
1 8 oz pkg of cream cheese, softened
2 eggs
3 1/2 Cups confectioners sugar
1 tsp vanilla


Start with Bar layer:
Combine cake mix, eggs, melted crisco, milk and nuts in a large bowl.
Either with a fork or at the low speed of mixer, mix until moistened.
Do not overmix.
Spread mixture evenly into greased pan.

Next make topping:
In a large bowl,
Beat cream cheese with mixer on medium speed until smooth.
Add eggs, sugar, and vanilla. Mix all until smooth.
Spread evenly over bars.

Bake for about 35 minutes.

When the bars are done the edges and top will be a light golden brown
and a little shiney looking.

Cool completely.
Cut into 1 1/2 inch squares
makes about 48 bars

variations:
yellow cake mix
devil's food cake mix
pecans
walnuts

next time I am going to try using Lemon cake mix and lemon extract
instead of yellow cake mix and vanilla extract.
