MERRY CHRISTMAS EVE LIGHT BREAKFAST & LUNCH MENU

Merry Christmas Eve Morning !

This morning breakfast for my honey is simple.

Hot Oatmeal with butter and syrup and Fried apples.
Of course I always offer a side order of toast and preserves.
His favorite is blackberry but I am partial to strawberry myself.



SIMPLE FRIED APPLES FOR TWO

3-4 Apples, washed & pared
(I used 2 granny smith and 2 red cheapies)
Preheat skillet with butter.
Place sliced apples in skillet on low-med heat.
Once they start simmering,
sprinkle apples with cinnamon and
brown sugar ( or ) white sugar or splenda.
Simmer on low until apples are tender.
I usually do a taste test adding more
cinnamon and sugar till it suits me.
that's it.
Warms up good in the microwave too


For Lunch Today

Homemade Veggie Soup
Toasted Bacon & Lettuce Sandwiches
Coleslaw

(Yesterday) I made home made soup from the broth of my crock
pot chicken and will fry up some bacon for Bacon and lettuce sandwiches,
Tomatoes were wayyyy too expensive yesterday so we are having
toasted BL's...
:)


CREAMY DELI COLESLAW :

1 lb of shredded cabbage / carrots
( Can use one 16 oz bag of prepackaged classic cole slaw )
2 Tablespoons milk
1/8 tsp reg salt
1/8 tsp celery salt
1/2 tsp sugar or splenda
1 Tablespoon White vinegar
1/2 + Cup mayonaise

In a bowl mix milk, salt, sugar & vinegar.
Mix well. Add mayo.
Slowly add in shredded cabbage mixture.
We like Creamy Cole Slaw
so we add additional mayo.
Refrigerate.



Well, the Apples are tender and smelling, oh so good and the oatmeal is blurping away.
I just popped in one of my all time favorite movies
"The Bishop's Wife" with Loretta Young, David Niven and Carey Grant.
I am gonna take a break and go watch.
